Sausage Breakfast Skillet

Ingredients 

  • 2 tablespoons butter
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 pound sweet italian sausage 
  • 1 ½ cups cooked black beans 
  • 3 cups chopped kale 

To Serve

  • 2 tablespoons butter 
  • 4 eggs

Instructions 

  • In a medium sized frying pan, melt the butter over medium heat. Add the onions and saute for 2-3 minutes. Add the garlic and saute for another 30 seconds. 
  • Add the sausage and break it up into small bits. Cook, stirring occasionally until the sausage is cooked though and begins to brown. 
  • Add in the cooked beans. 
  • Add the chopped kale and stir. Cook for another 5 minutes until the kale is wilted.
  • To serve, melt 2 tablespoons of butter into a large skillet and fry 4 eggs. 
  • Top the fry up with fried eggs and enjoy!
