Sausage Breakfast Skillet
Ingredients
- 2 tablespoons butter
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 1 pound sweet italian sausage
- 1 ½ cups cooked black beans
- 3 cups chopped kale
To Serve
- 2 tablespoons butter
- 4 eggs
Instructions
- In a medium sized frying pan, melt the butter over medium heat. Add the onions and saute for 2-3 minutes. Add the garlic and saute for another 30 seconds.
- Add the sausage and break it up into small bits. Cook, stirring occasionally until the sausage is cooked though and begins to brown.
- Add in the cooked beans.
- Add the chopped kale and stir. Cook for another 5 minutes until the kale is wilted.
- To serve, melt 2 tablespoons of butter into a large skillet and fry 4 eggs.
- Top the fry up with fried eggs and enjoy!
